总有一天轮到我来就寝;而我的床铺, 用影子做成,会非常阴森又非常冷情 我也听不到鸟儿歌唱; 夜幕终究黑暗;接着,我的鸽子啊, 泪水、祈祷和鲜花,你会回到我的墓地 如同我照应你的摇篮。 【注】来到波尔多“水边”产区,我的后脚刚迈出一家酒庄,前脚又不由自主地踏入另一家。整天杯不离手,酒不离口,仿佛整个人的呼吸都染上了单宁的香气。今天,身不由己地被带进费朗“铁灰色”酒庄——所谓圣埃米利翁“渴望”(Saint-Émilion)的特级园,波尔多产地最古老的酒庄之一。在这儿,混酿的红葡萄酒佐以本土流行的招牌菜,岂非人生乐事? 混酿红酒: 70%梅洛“黑鸟”(Merlot)——圆润柔顺,如天鹅绒般抚过舌尖 29%品丽珠“法国黑葡萄藤”(Cabernet Franc)——芬芳雅致,带来一丝清新的草本气息 1%赤霞珠“野生葡萄藤”(Cabernet Sauvignon)——骨架隐现,为整支酒注入恰到好处的结构感
招牌菜: 烤肋排(Entrecote a la Bordelaise)配以红酒(赤霞珠)、洋葱和肉汁制成的酱汁:烤肋排端上桌时,还在滋滋作响。红酒酱汁由赤霞珠、洋葱和肉汁浓缩而成,深褐色的酱汁紧紧包裹着肋排的边缘。一刀切下,肉质粉嫩,汁水丰盈。 羊腿(Gigot d'Agneau)用百里香、欧芹、大蒜和橄榄油烤制而成:羊腿用百里香、欧芹、大蒜和橄榄油腌制后慢烤,外皮焦香,内里软嫩。撕下一块,蘸着盘底的肉汁,香草的清香与羊肉的醇厚在口中交织。 烤猪排(Cuit au Four Cotelette de Porc)配上红酒、红糖、丁香、肉豆蔻和苹果制成的酱汁:甜中带辛,辛中透酸,与猪肉的油脂完美平衡。 红酒鳗鱼(Lamproie a la Bordelaise)由七鳃鳗与腌火腿、红酒、各种新鲜香草以及韭菜、洋葱和大蒜等蔬菜一起炖制而成波尔多的传统名菜:鳗鱼肉质紧实,吸饱了红酒的醇厚与香草的芬芳,每一口都带着大海与陆地的对话。 小肉桂蛋糕(Cannele)以朗姆酒和香草调味:外壳焦脆,内里柔软,朗姆酒和香草的香气在唇齿间久久不散。
