1 cup butter
2 cups sugar
4 large eggs
2 tsp vanilla extract
1 cup sour cream
3.5 cups all purpose flour
2 tsp baking soda
1 tsp salt
4-5 large, ripe bananas, mashed
Cream butter and sugar until light. Beat in eggs, vanilla and sour cream.
Combine dry ingredients. Gradually add to creamed mixture, blend well.
Stir in mashed bananas.
Pour into 3 greased loaf pans (8x4x3) or 2 (9x5x3) loaf pans.
Bake at 350oC for 50-55min until done.
P.S. Variations on a theme: add 1 cup chopped nuts or mini chocolate chips, or blueberries.
