酥脆空心油條Crispy Youtiao 食材 Ingredients ◎中筋麵粉 300g All purpose flour ◎溫水 180ml Warm water ◎雞蛋 1個 Egg ◎泡打粉 5g Baking powder ◎小蘇打 2g Baking soda ◎鹽 4g Salt ◎糖 5g Sugar ◎食用油 20g Cooking oil 製作步驟 Steps 01 所有食材拌成團,蓋保鮮膜醒麵10分鐘。 Mix all ingredients into a dough, cover and rest for 10 mins. 02 案板抹油,用拳頭連續揣麵、折疊至表面光滑,切勿揉麵。 Oil surface, press and fold dough with knuckles until smooth, do not knead. 03 麵團整理成長條,用保鮮膜包緊,冷藏發酵8小時以上。 Shape into a strip, wrap tightly, and refrigerate for 8 hours or more. 04 取出麵團切勿再揉,撒乾粉輕輕擀成1公分厚、2公分寬的長條。 Remove dough and do not knead, roll to 1cm thick, cut into 2cm strips. 05 兩片麵片重疊,用筷子在中間壓出一道深痕使兩層黏緊。 Stack two strips, press a deep groove down the center to seal them. 06 油溫180度,拉長麵條下鍋,不停翻動炸至金黃膨脹。 Heat oil to 180C, stretch dough, fry and flip constantly until golden.
