抹茶紅豆蒸蛋糕 Matcha Red Bean Steamed Cake 【材料】 雞蛋 3個 低筋麵粉 55g 玉米油 40g 純牛奶 55g 抹茶粉 7g 細砂糖 15g 蜜紅豆 30g 檸檬汁 少許 鹽 1g [Ingredients] Eggs 3 Cake Flour 55g Corn Oil 40g Milk 55g Matcha Powder 7g Sugar 15g Sweetened Red Bean 30g Lemon Juice Salt 1g 【做法】 [Instructions] 1 蛋黃糊 將油、奶、抹茶粉混合,過篩拌入麵粉與蛋黃,攪拌至無顆粒。 Mix oil, milk, and matcha. Whisk in flour and yolks until smooth. 2 蛋白霜 蛋白加入砂糖與檸檬汁,打發至硬性直立尖角。 Whip egg whites with sugar and lemon juice to stiff peaks. 3 翻拌 將蛋白霜分次拌入蛋黃糊,加入蜜紅豆,輕快拌勻。 Fold meringue into batter gently, then add red beans. 4 入模 倒入模具震出氣泡,表面蓋上保鮮膜並戳幾個小洞。 Pour into mold, tap to remove air. Cover tightly with film and poke holes. 5 蒸製 水開後中火蒸 35 至 40 分鐘,關火燜 3 分鐘。 Steam on medium heat for 35-40 mins. Let sit for 3 mins. 小貼士 選用高品質抹茶粉風味更佳 保鮮膜必須封緊以防蒸汽回流
