初一十五來吃素【羅漢齋】 【Buddha's Delight】 材料 乾香菇 乾木耳 乾黃花菜 腐竹 胡蘿蔔 荷蘭豆 玉米筍 杏鮑菇 上海青 薑片 Ingredients Dried Shiitake Mushrooms Dried Black Fungus Dried Daylily Dried Beancurd Sticks Carrot Snow Peas Baby Corn King Oyster Mushroom Shanghai Bok Choy Ginger Slices 調料 生抽 老抽 素蠔油 白糖 鹽 白胡椒粉 芝麻香油 Seasonings Light Soy Sauce Dark Soy Sauce Vegetarian Oyster Sauce Sugar Salt White Pepper Sesame Oil 步驟 1️⃣ 將乾香菇、木耳、黃花菜、腐竹冷水泡發 2 小時,保留泡香菇的水作為高湯備用。 Soak dried ingredients in cold water for 2 hours. Keep the mushroom soaking water as broth. 2️⃣ 將胡蘿蔔、玉米筍、荷蘭豆、木耳、腐竹依次焯水 1-2 分鐘,撈出瀝乾。 Blanch carrot, baby corn, snow peas, fungus, and beancurd sticks for 1-2 minutes. Drain. 3️⃣ 熱鍋下油,小火將糖炒至焦糖色,放入薑片爆香。 Heat oil, caramelize sugar over low heat, and sauté ginger slices until fragrant. 4️⃣ 放入杏鮑菇與香菇慢煎出香,倒入焯好的食材翻炒均勻。 Pan-fry king oyster mushrooms and shiitake until fragrant, then add all blanched ingredients. 5️⃣ 倒入泡香菇的高湯與所有調味料,蓋蓋小火燜煮 5-8 分鐘。 Add mushroom broth and seasonings. Cover and simmer for 5-8 minutes. 6️⃣ 最後加入青菜與荷蘭豆,大火收汁,淋入香油即可出鍋。 Add bok choy and snow peas. Thicken sauce over high heat, drizzle with sesame oil, and serve.
