台南經典小吃:素食版棺材板 Tainan Classic Snack: Vegetarian Coffin Bread 【 材料】 厚片吐司 4片(約4-5cm厚) 食用油 適量(炸用,約1-2cm深) 胡蘿蔔 1條(切丁) 土豆 1個(切丁) 玉米 1條(取粒) 蘑菇 幾朵(切片,可選) 椰漿 200ml 熟麵粉 30g 黃油 20g 鹽 適量 白胡椒粉 適量 【 Ingredients 】 Thick toast 4 slices (about 4-5cm thick) Cooking oil Q.S. (for frying, about 1-2cm deep) Carrot 1 (diced) Potato 1 (diced) Corn 1 (kernels removed) Mushrooms a few (sliced, optional) Coconut milk 200ml Cooked flour 30g Butter 20g Salt Q.S. White pepper powder Q.S. 【 製作步驟 | Steps 】 1️⃣ 厚片吐司切好備用,熱油中火炸到兩面金黃酥脆,撈出瀝油。油不要太多,覆蓋吐司底部3-4cm就夠了。 Prepare the thick toast slices, then fry them in hot oil over medium heat until both sides are golden and crispy. Drain the oil. Do not use too much oil; covering 3-4cm of the toast bottom is enough. 2️⃣ 稍微放涼後,沿頂部切下一個"蓋子",把裡面鬆軟的面包心掏出來,壓實底部,形成一個棺材形狀的盒子。蓋子要留著,後面蓋上用。 Let it cool slightly, then cut a "lid" along the top. Scoop out the soft bread crumb inside and press the bottom firmly to form a coffin-shaped box. Keep the lid for later use. 3️⃣ 鍋裡放油,先炒蘑菇出香,再放胡蘿蔔、土豆翻炒,最後加玉米粒。炒均勻後撒點鹽。 Heat oil in a pan, sauté the mushrooms until fragrant, then add the carrots and potatoes to stir-fry. Finally, add the corn kernels. Stir-fry evenly and sprinkle with some salt. 4️⃣ 在蔬菜上撒入面粉,翻勻炒到看不到油脂,然後慢慢倒入椰漿,小火邊倒邊攪,煮到濃稠。撒白胡椒粉調味,關火。 Sprinkle flour over the vegetables, stir-fry evenly until the oil is no longer visible, then slowly pour in the coconut milk. Stir while pouring over low heat, and cook until thick. Season with white pepper powder and turn off the heat. 5️⃣ 把做好的餡料填入吐司棺材裡,蓋上蓋子,趁熱吃! Fill the prepared stuffing into the toast coffin, cover it with the lid, and eat it while it is hot! 【 小贴士 | Tips 】 💡 椰漿替代奶油是素食版的關鍵,濃郁度一點不差,甚至更香。想要更稀一點可以加適量清水。 Replacing cream with coconut milk is the key to the vegetarian version. The richness is just as good, or even more fragrant. If you want it thinner, you can add an appropriate amount of water. 💡 面粉一定要炒熟(炒到微微發黃、沒有生粉味),這樣勾芡才不會有面粉味,口感更醇厚。 The flour must be cooked thoroughly (stir-fry until slightly yellow with no raw flour smell) so that the thickening won't taste like raw flour and the texture will be mellower. 💡 白胡椒粉是靈魂調味料,別省。 White pepper powder is the soul seasoning, do not skip it. 💡 餡不要做太稀,濃稠能掛住才不容易把吐司泡軟。 Do not make the stuffing too thin. It needs to be thick enough to hold so it won't easily soak and soften the toast. 💡 吐司要趁熱吃,涼了會變軟塌掉。 The toast must be eaten while hot; it will become soft and collapse when cold. 💡 免油炸版:用烤箱180°C烤30分鐘,或者空氣炸鍋180°C炸10-15分鐘,一樣可以酥脆。 Oil-free version: Bake in the oven at 180°C for 30 minutes, or use an air fryer at 180°C for 10-15 minutes to achieve the same crispiness.
