Ingredients
2 cups cake flour
2-3 tablespoons sugar
1 tablespoon baking powder
1 tablespoon grated orange zest
80g salted butter, chilled and diced
2 large eggs, lightly beaten
80g fresh
full cream milk
1 cup dried cranberries

Preheat the oven to 190C or 380F

In a large bowl, stir together flour, sugar, baking powder. Cut in butter until mixture resembles coarse crumbs.

Add cranberry to the flour mixture

In another bowl, beat together milk and egg; save a little bit for egg wash, slowly pour 90% of beaten egg into dry ingredients, save a little bit for egg wash, mixing with rubber scraper until dough forms.

Dump the dough onto a well-floured surface, flour your hands and a rolling pin and roll the dough 3/4-inch thick. You should see small bits of butter in the dough. Fold the dough and shape it into a ball, then roll the dough ¾ inch thick, cut circles of dough into 8 pieces. Place the scones on a baking pan lined with baking sheet.

Brush the tops of the scones with egg wash

Bake for 18 – 20 min

半杯raisin &半杯walnut来替代cranberry,

1.5 cups cake flour + 0.5 cup whole wheat flour
3 tablespoons brown sugar
1 tablespoon baking powder

0.5 cup raisin, 0.5 cup walnuts
