1. 素煸四季豆
Stir fried green bean with garlic and chili
四季豆洗净沥干水,用大火炸软*,倒出炸油,留1个薄薄锅底的油(约1tbsp), 煸香蒜和干辣椒, 加盐,下炸软的四季豆, 翻炒两分钟即可。
*若不想用太多油(我为gege测了一下, 1斤四季豆, 可用2.5 tbsp 油)。 用中火翻炒四季豆几分钟,再加香蒜和干辣椒,转小火炒软四季豆。 因为油少火大会很快干锅。
Fry or stir fry the green bean till tender, leave about 1 tbsp oil in the pan and drain the rest of oil, stir fry garlic and dried chili till fragrant, add the green bean and salt, stir fry for 2 more minutes, ready to serve.
2. 榄菜四季豆
Stir fried green bean with the preserved vegetable & minced pork
先把四季豆用中火炸软(过程同上),煸香蒜,碎辣椒,肉末和橄榄菜,下炸软的四季豆一起翻炒,视个人口味和橄榄菜咸淡情况来决定要不要加一点盐,起锅装盘。
